Avocado Bean Salsa

Prep Time: 15 minutes | Serves: 4-8

Dip crackers or veggies in this dip, use as a hardy snack, flavor your wrap and sandwich or dress your favorite soup.

Ingredients

  • 2 Medium Avocados, ripe but not too soft, seeded and diced
  • 1 Small Red Onion, diced
  • 2 Persian Cucumbers, seeded and diced
  • 1/2 Red Bell Pepper, diced
  • 1/2 cup Eye of the Goat beans
  • 1/4 cup Cilantro, Italian Parsley and/or Basil, chopped
  • Juice of 1 lemon or lime
  • 1 clove garlic, grated
  • Salt and Pepper to Taste

Prep Instructions

  1. Combine all ingredients

    Well, I should actually call this wannabe guacamole since it's the exact same ingredients just with less ripe avocados. If you make this exactly as laid out below, it will burn... well, I guess that depends on how potent your onions are!

    Ingredients

    • 1.5 Avocados (because that's what I had. Just use 2 for this recipe), diced (or mashed)
    • 1/2 medium Red Onion, diced
    • 1/4 jalapeno, diced finely
    • 1/3 bunch cilantro, stems removed, chopped finely
    • Juice of 1/2 lemon
    • Handful cherry tomatoes (I used the organic sugar plum tomatoes from TJ's)
    • Dash of salt

    It was a hit this weekend when I make my usual Chicken Curry Salad with a bit more jazz as a sandwich for my friend's Bridal Shower Brunch. This recipe will make 12+ sandwiches but will top 6-8 salads. I used an organic multigrain bread, but feel free to use your favorite. Scoop over your favorite greens - I used arugula in the pictures below - for a fresh summer salad!

    You can use more vinegar and omit the lemon juice in the sauce if you wish the sauce to taste more mayo-y. Add the water or broth in increments to avoid the sauce becoming too watery. Depending on the softness of the cashews, you may need more or less liquid. Also, if you want a more traditional chicken salad, just omit the curry!

    It's the perfect recipe to throw together with that left over chicken. Chop up a red bell pepper, cucumber and any other crunchy fruit, veggie, nuts, etc for your favorite combo!
