Broccoli Shiitake Stirfry

Cook time: 20 minutes | Serves: 2

A stir fry is an easy way to throw together some leftover for a simple meal. I had some steamed broccoli and brown rice on hand so I decided to throw them together with some cayenne and paprika.

Ingredients

  • 8 oz Shiitake mushroom, sliced, stems removed
  • 2 cups broccoli florets
  • 2 cups cooked brown rice
  • 1/2 medium brown onion, sliced
  • salt to taste
  • dash cayenne pepper
Instructions
  1. Start by sauteing onions. Add sliced mushrooms and cook until tender. Season with salt and cayenne.
  2. If you haven't steamed your broccoli yet, transfer onion/mushroom mix in bowl and cook broccoli in the same pan. Add just enough water for the broccoli to absorb and cover. Let steam for a couple of minutes.
  3. Add onion/mushroom mixture to broccoli and stir well.
  4. Add brown rice, stir and voila!

    I love making soup purely with veggies, especially when I'm not in the mood to just eat them steamed or stir-fried. You can substitute the asparagus with any other hearty veggie you like, including broccoli, cauliflower or even cabbage.  I like to sautee the asparagus but you can steam them if you like.

    The "cream" is optional but it does give a great texture to the soup. If you want to add the cream, you should plan ahead so you can soak your cashews overnight. You could use make it without soaking them, but you'll notice that the longer you soak, the less nutty the flavor and the more frothy the texture will get.

    Ingredients:
    • 2 cups water or vegetable broth
    • 1 tbsp olive oil
    • 1 bunch asparagus
    • 1/2 medium white or yellow onion
    • Sea Salt to taste
    • Dollop Cashew Cream (optional)

    This recipe makes about 60 meatballs but you don't have to use it all at one time, thus the huge range on servings listed above. This is something that you can make and store some in the freezer and pop some in chicken stock for a quick weekday dinner. Traditional sopa de albóndigas is made from uncooked rice, ground beef and chorizo, but my mom used to make it for me with chicken. I used Shelton's ground chicken and cooked brown rice as uncooked brown rice would take forever and still be a bit hard just boiled in the soup.

    Ingredients for the Meatballs (makes approx 60 meatballs)

    • 2 lbs Ground Chicken
    • 3 cups cooked Brown Rice
    • 3 Eggs, beaten
    • 1 medium Yellow Onion, diced
    • 2 cloves garlic, minced
    • Thyme leaves from 5 sprigs
    • Handful chopped parsley
    • Salt and Pepper

    This is one of my most favorite variations of miso soup as the kombu (kelp) and shiitake complement the tradition old miso soup so well. It's actually my mom's recipe that I stole! :)

    Miso is Japanese fermented soybean paste just at dwen-jang is Korean fermented soybean paste. Japanese miso is a lot milder in taste and less potent on the nose than the Korean counterpart. The process in making these different miso's is different but they both boast probiotics - healthy intestinal bacteria. Make sure you don't let the soup boil (just simmer) so you maximize the health benefits!

    Make sure that your miso is MSG free and made with organic soybeans. The brand I recommend it Yamabuki, available at Japanese markets. It's hard to find Korean miso without MSG but they do exist. My mom makes it at home so for you daring individuals, I'll put up a recipe after I master the kimchi-making process!
