Making nut milk is a lot easier than you might have imagined. With just a tiny bit of planning (remembering to soak them), you'll end up with fresh creamy nut milk.  Even if you don't soak your nuts overnight, it is totally achievable, though your cashew milk might be a bit grittier.

This recipe is for cashew milk but you can substitute it with any other but. Keep in mind that other nut milks, to have the consistency of milk, may have to be strained in a nut milk bag or cheesecloth to remove the grit.

You may not want to add the honey and vanilla if you want to use the milk for something savory, like a creamy pesto or curry.

This recipe will yield about 32 oz of nut milk and keep for about 3-5 days in the fridge. Cut recipe in half if you want fresher nut milk.

    Ingredients

    • 1 cup organic cashews, soaked overnight
    • 24 oz water
    • 2 tsp vanilla extract (optional)
    • 2 tbsp honey (optional)

    Instructions

    1. Blend all together.
    2. Enjoy!

Reminiscent of my childhood hot summer days with sticky orange creamsicles on bicycles and of my adolescent trips to the mall with a big styrofoam cup of Orange Julius, this wholesome version of the orange-and-cream pair will trigger your taste buds to walk down memory lane too.

Terra Bella Living Cuisine in Redondo Beach called it 'Orange Dreamsicle' - their hemp milk - dried dates creation. On their last day open, we all went to pay tribute and though their supply of ingredients were dwindling, they had just enough orange extract to make me a shake. Not only did they make one for me, they kindly shared the simple ingredients in the shake!

They used store bought hemp milk but I substituted it with my cashew milk. The Flavorganics orange extract really makes this shake as I first bought a different brand at Whole Foods and it wasn't the same. A few dates, some vanilla and a handful of ice was all that took to make this delicious shake.
