Making Cashew Milk

Making nut milk is a lot easier than you might have imagined. With just a tiny bit of planning (remembering to soak them), you'll end up with fresh creamy nut milk.  Even if you don't soak your nuts overnight, it is totally achievable, though your cashew milk might be a bit grittier.

This recipe is for cashew milk but you can substitute it with any other but. Keep in mind that other nut milks, to have the consistency of milk, may have to be strained in a nut milk bag or cheesecloth to remove the grit.

You may not want to add the honey and vanilla if you want to use the milk for something savory, like a creamy pesto or curry.

This recipe will yield about 32 oz of nut milk and keep for about 3-5 days in the fridge. Cut recipe in half if you want fresher nut milk.

Ingredients

  • 1 cup organic cashews, soaked overnight
  • 24 oz water
  • 2 tsp vanilla extract (optional)
  • 2 tbsp honey (optional)

Instructions

  1. Blend all together.
  2. Enjoy!
  • 1 cup cashew before soaking
  • 1 cup cashews after soaking bloats to 2 cups cashews
  • 1 cup soaked cashews blended with 12 oz water
  • 1 cup soaked cashews blended with 12 oz water yields 16 oz nut milk.
  • Flavor with raw honey and vanilla extract...
  • ...or with 1 vanilla bean...
  • ... scraped.

    I had a bit of cashew milk leftover last Sunday that I wanted to use up.  I poked around my freezer for some frozen fruit and found just enough pineapple pieces. It was the perfect cool-down drink post-hike for us. 

    Then today, my mom gave me the sweetest, perfectly ripe pineapple so I was tempted to make this again. Luckily, I made a fresh batch of cashew milk yesterday so we were able to enjoy the treat again! Be creative and add mangoes or berries to jazz up a nut-milk based smoothie!

    Ingredients

    • 8 oz Cashew Milk or other Nut Milk
    • 1 cup pineapple piece, fresh or frozen
    • 5 06 ice cubes if using fresh pineapples

    Directions

    1. Combine all ingredients in a blender and process till smooth.

    This is such an easy raw breakfast! Use any combination of nuts/seed you have at home. If you're using sweetened nut milk, omit the honey. Make sure that you don't over process the nuts or they will become more like nut-butter. This sweet and crunchy bowl of goodness is tastier and way healthier than cereal!

    • 1 large apple, diced (or if you're using a food processor, use your grater blade!)
    • 1/2 cup Raw nuts and/or seeds, chopped or coarsely processed.
    • Ground cinnamon (to taste)
    • 1 tsp raw honey (optional)          
    • 1/2 cup Homemade or store bought unsweetened nut milk or rice milk

    Coarsely grind (pulse) the nuts and seeds in a food processor or blender. Combine apple and nuts and seeds in a medium bowl. Add cinnamon and honey.  Mix well. Spoon into bowls and add milk.

  • Prep Time: 15 minutes | Cook Time: 45 minutes | Serves: 4

    An easy dessert you can pop into the oven at the beginning of a meal, this apple would make a great end to a night entertaining guests or an laid-back evening at home.

    Ingredients:

    • 4 medium apples (any variety)
    • 8 tbsp dried currant, cranberries or raisins
    • 2 tsp cinnamon
    • 2 tsp agave nectar, divided
    • 1/2 cup cashews
    • 1/2 tsp vanilla
    • approx 1/4 cup water or nut milk

    Directions:

    1. Preheat oven to 350 degrees F.
    2. Mix 1 tsp agave, cinnamon and currant or raisin in a bowl.
    3. Core apples and fill the center of each with the above mixture.
    4. Bake apples for about 45 minutes.
    5. Blend cashews, vanilla and remaining agave until smooth, adding water or nut milk as necessary.
    6. Spoon over hot apples and serve immediately.
