Portabello Swiss Chard Wrap

Prep Time: 10 minutes | Cook Time: 10 Minutes | Serves: 2

We use greens instead of tortilla or pita in this recipe to provide a low-carb, quick lunch option. This recipe works really well for a packed lunch. Just make sure to cool the mushrooms before arranging and packing the wrap.

Ingredients
  • 2 Swiss Chard Leaves
  • 1 tsp Extra Virgin Olive Oil
  • 2 Large Portabello Mushrooms
  • 2 tsp balsamic vinegar
  • Pinch Pink Salt or Sea Salt
  • 2 Roma Tomatoes
  • 1 Carrot, sliced (can use baby carrots too)
  • Handful of Sprouts of choice (try broccoli, pea or daikon sprouts!)
  • 1 Small Red Onion, sliced
  • 2 Tbsp Lydia's Organics' Seasoning
  • 2 Tbsp Raw cashew butter
  • Sea salt or pink salt to taste
Instructions
  1. Slice mushrooms into 1/2 in strips
  2. Heat pan on medium heat
  3. Add olive oil and sautee mushrooms, seasoning them with salt and balsamic vinegar until all liquid evaporates
  4. Spread 1 Tbsp of cashew butter on each chard leaf and arrange veggies.
  5. Wrap and enjoy!

    I'm so glad we have gluten-free alternatives such as this brown rice tortilla from Trader Joe's. Because this tortilla should be kept in the fridge or freezer, it tends to get a little stiff. Before using, heat on the stove top for just a few minutes, or use the defrost function on your toaster oven.

    I'm definitely taking advantage of the fresh heirloom tomatoes everywhere this summer.  This is a light, flavorful salad that requires no dressing!

    Ingredients:

    • 5 oz Organic Baby Spinach
    • 10 oz (2 fillets) Wild Black Cod
    • 1 clove Garlic, freshly grated
    • 1 Tbsp Extra Virgin Olive Oil
    • Juice of 1 lemon
    • 1 Tbsp Simply Organic All-Purpose Seasoning
    • Pink Salt or Sea Salt and Pepper to taste
    Directions
    1. Turn on broiler
    2. Arrange fillets in a oven-safe dish
    3. Season both sides of black cod fillets with salt, pepper, freshly grated garlic, olive oil, lemon juice and all-purpose seasoning. 
    4. Broil for 5-6 minutes on both sides
    5. While the fish is cooking, wash spinach and cut tomatoes
    6. Arrange on plates and top with fillets and seasoning from baking dish
    7. Serve Immediately.

    Inspired by a Spanish tapa, I ventured to use my beloved saffron in something other than paella. The Italian seasoning mix complements the saffron without overpowering it.  I used spinach but feel free to experiment and throw in any other hardy green veggie for color, nutrition and texture! Keep in mind that the Italian Seasoning Mix I use already has garlic in it, so if you want a milder garlic flavor, omit or cut my generous serving of fresh garlic.

    Ingredients


    • 1 lb Wild Jumbo Shrimp (I used TJ's Wild Blue Shrimp)
    • 1/2 package Spicely Organics' Italian Seasoning Mix
    • Pinch high quality Saffron (1 package of Spicely Organic's Saffron)
    • 4 cloves Garlic, grated or pressed or minced
    • 2 Tbsp Extra Virgin Olive Oil
    • 5 oz. Baby Spinach
    • Sea Salt or Pink Salt to Taste
