Punjabi Chhole by Arora Creations

Prep Time: 5 minutes | Cook Time: 10 minutes | Serves: 6

I chose not to add the optional green chilies in this spice mix by Arora Creations as the tikka masala was enough spice for one meal. The flavor was intense yet mild; overall enjoyable!

I followed the instructions on the package and all came out wonderfully!

I decided to give Arora Creations' Spice Mixes a try and decided to cook tikka masala... how can you go wrong, right?  I used 1.35 lbs of chicken instead of 2 lbs so I only used 2/3 of the package. I cut the olive oil to 1/4 of a cup but used the whole 8 oz can of tomato sauce.

It was fairly simply, minus my many tears from chopping the onions. The recipe calls for 1/2 cup of ginger!  I decided to grate the ginger instead of chopping it so that took a bit of elbow grease even with my friend, the microplane grater.  It was quite spicy, I'd say a 3 on a scale of 1-5 for curry but my fellow taster (huh hum.... the hubbs) didn't break a sweat at all!

I'm so glad we have gluten-free alternatives such as this brown rice tortilla from Trader Joe's. Because this tortilla should be kept in the fridge or freezer, it tends to get a little stiff. Before using, heat on the stove top for just a few minutes, or use the defrost function on your toaster oven.

    Ingredients
    • 1 Chicken Breast
    • 1 tsp Extra Virgin Olive Oil
    • Juice of 1/2 a lemon
    • Pink Salt and Fresh-ground pepper to taste
    • 2 Brown Rice Tortillas
    • 10 Cherry or Sugar Plum Tomatoes, halved
    • 2 cups Baby Spring Mix
